This spicy Malaysian fried rice variation is a great meal when you are low on time but don’t want to skimp on flavour. The combination of coconut, peanuts and fresh vegies is a real tropical treat.

Ingredients

  • 500g skinless chicken breast fillet, stir-fry strips
  • 1 tablespoon reduced fat crunchy peanut butter
  • 1 x 190g packet Continental® Satay Rice, Value Pack
  • 1 cup water
  • 1/4 cup reduce fat milk
  • 11/2 cups snow peas
  • 1 large red capsicum, chopped
  • 2 tablespoons chopped coriander, optional
  • ½ teaspoon natural coconut essence, optional

Instructions

  1. Heat oil and cook chicken until lightly browned. Add peanut butter and water, bring to the boil.
  2. Add rice and coconut milk, cover and cook gently for 10 minutes, adding the snow peas and capsicum for the last few minutes of cooking. Stir well, replace lid and allow to stand for 2 minutes before serving. 
  3. Sprinkle served with coriander.

    Hint: Substitute prawns for half of the chicken, and sprinkle with sliced spring onions.
