Egg and bacon is too good to only have for breakfast! This potato bake with a difference is a delicious and easy mid-week dinner which is also great cold on sandwiches – if there’s any left!

Ingredients

  • 600g potatoes, Desiree, washed, skin on, cut into 3cm chunks
  • 100g bacon, trimmed, roughly shredded
  • ½ cup sliced sun dried tomatoes
  • 1 x 490g jar Continental® Chicken Tonight, Creamy Herb & Mustard
  • 1/4 cup reduced fat thickened cream
  • 1/2 cup grated reduced fat tasty cheese
  • 1 teaspoon picked thyme leaves
  • 4 x 55g eggs

Instructions

  1. Preheat oven to 180°C.
  2. In a bowl, combine potatoes, bacon, tomatoes, Chicken Tonight and cream. Place mix into a large, lightly greased ovenproof dish.
  3. Bake 40 minutes or until potatoes are tender and top is lightly golden.
  4. Remove from oven. Using a spoon, make 4 holes in the mixture. Carefully crack 1 egg into each hole. Sprinkle with cheese and thyme and return to the oven for a further 10 minutes, or until eggwhites have just set.
  5. Season the bake with freshly cracked black pepper and serve.

    Hint: Bake these in 4 individual dishes. the cooking time will be the same. Can substitute Continental Chicken Tonight, Country French Chicken.
