Chicken Satay with Satay Rice & Peanut, Coriander & Cucumber Salad

Who doesn’t love satay? This tasty chicken dish combines the creaminess of peanuts with the fresh flavours of coriander and cucumber. 

Ingredients

  •   2 skinless chicken breast fillets (400g), cut into 2cm cubes
  •   olive oil spray
  •   ground white pepper
  •   1 x 205g Value pack, Continental®
      Satay Rice
  •   1¾ cups (440ml) water
  •   2 Lebanese cucumbers, deseeded, chopped
  •   1 teaspoon olive oil
  •   1 teaspoon lemon juice
  •   1 tablespoon chopped coriander
  •   1 tablespoon chopped unsalted peanuts, toasted


 

Instructions

  1. Place chicken onto skewers, lightly spray with oil and season with pepper. Preheat grill pan or fry pan to moderately hot, add the chicken skewers and allow to brown and cook through, keep warm.
  2. Prepare the Satay Rice following packet instructions using the water. Keep warm.
  3. Place cucumber into a small bowl and lightly dress with olive oil and lemon juice, stir through coriander and peanuts.
  4. Serve chicken skewers over the Satay Rice and place a little cucumber salad on the side.
